You can get mixed results using random MAME sets. Some stuff will work fine, some stuff won't. You will have the best luck with the MAME versions that are closest to whatever romset you have.
With Romcenter or similar and the datfiles on the image you can probably take a lot of the guess work out of it and just find out what roms will work where without having to try everything. You may find the rom management program can fix up a lot of the minor romset changes too.
