Stereo missing one channel
I assume what i am running into is as expected being Jamma is mono audio. With a game like Dragon's Lair that uses two chanels (L/R), i am missing some of the sound. I found that if i pull the audio jack out slightly from the Raspberry Jamma HDMI converter i get both channels with it half out (i assume bridging L/R channels in the jack). If this is the case, is there any damage risk to the Raspberry Jamma board or the PI if i were to make a stereo to manual cable (bridging L/R signal wires)? Anybody have thoughts on this or is this another way to solve this issue?

You must have a faulty stereo audio cable between the DAC and RaspberryJAMMA. Very sorry for that, I had an unknown number of faulty cables supplied to me and I missed some in testing due to most arcade games running in mono. Turns out Dragons Lair is a great test for both channels of sound as the announcer is in one side and the music on the other.
If you get me your details I will happily send you out a replacement audio cable as a replacement for the faulty one. If you happen to have another 3.5mm plug stereo audio cable you could use it should also fix the issue.
There's no need to worry about the stereo being mixed down to mono as the stereo signal is combined into mono before amplification on the RaspberryJAMMA.

Bingo, it appears one conductor is open between the two jack ends. I should not have assumed that could not have been an issue. Thanks for the response. I will PM you on the side to get another audio patch cable from you. Thanks!
