Super NOOB Basic Intro Help Needed

So I am extremely new to this. I picked up a horizontal and vertical set-up for a pair Candy Cabs. I read the basic instructions, but it didn't get me anywhere. I guess what I am asking is how do I start accessing menus to customize settings. Do I just hook-up a USB keyboard and hit a key? Really don't know. Any help or direction appreciated.

Also...the SNES game buttons are not working. How do I re-map?

By basic instructions do you mean the USER_GUIDE folder instructions? If not I'm unaware of what you already know. If I haven't helped let me know and I can probably be more specific. It can be hard to be certain with custom builds as I can't be sure whats been done but I'll help if I can. Assuming the builds you have have the shortcuts setup as normal and your cab has service and test hooked up you can do a lot without a keyboard but if you have a USB keyboard handy that works too. Plug in/unplug your keyboard with the cabs power off just to be safe.

If you haven't already I strongly recommend making backups of your SD cards (make images of the whole SD cards) before jumping into customising things. You can change almost anything about the system but you can also break it accidentally while learning something new...

As far as customising goes, in the game menu (a program called Attract-Mode) you can press 'test' (cab) or 'tab' (keyboard) to access it's menus. Attract-Mode is very customisable, you can add or remove gamelists, change themes etc. Each list can have it's own theme. Pressing 'service' or 'f4' will exit the game select menu to another instance of Attract-Mode that serves as the service menu for system adjustments. In this service menu you can change bootsplash images, system wide volume, scan games if you have the auto scanner off, etc.

In games if you want to change a setting there's 2 basic ways depending on the emulator in use. For MAME games pressing the 'player 1 start and player one joy right' together or 'tab' on keyboard will open MAMEs menus. For stuff running in Retroarch, like SNES for instance, pressing 'p1 start + p1 button 6' or keyboard 'f1' will open the Retroarch menus, the quick menu bit is usually all you need for games settings but there's a lot of other stuff in there too. The Retroarch controller settings can be quite confusing, they're really designed for a SNES style pad rather than arcade setups, you should be able to make changes to the controls in the quick menu.

Thanks for the detailed post. I want to start small on this...So for example, I want to rotate the picture on my monitor without having to rotate the monitor itself. I also want to make changes to the game list (add/delete). I assume I need a keyboard (do I?) connected. What's the process? Thanks.

If you just need to quickly edit the game list it can be done in Attract-Mode by pressing 'e' (for edit) on a keyboard while the game is selected. If you want to remove (or add) a lot of games you're probably better off just pulling the unwanted roms out using your desktop/laptop/whatever and rescanning.

When you say rotate the picture do you mean the other orientation (like hori to vert?), or that the picture is upside down but the correct orientation? To change orientation use the service menu (the one that loads if you exit the game menu). To keep the orientation and flip the image to match your monitor mount you have to edit one line in /boot/config.txt:
# Comment/uncommment to flip the image to account for monitor mounting
# this is a 180 degree flip NOT hori/vert mounting
# (see bottom of file for horizontal/vertical mount option)
#display_rotate=2
If you use Windows I recommend getting Notepad++, it's way better than the built in Windows text editors, won't break Linux files for you and is free.
