Anyone get Defender running on a cocktail cabinet?
I can get it going but the screen flip for 2- player doesn't work and I can't access the dip-switch menu.

Unfortunately Defender used some other way of setting cocktail mode that isn't (as far as I am aware) supported by MAME (see: https://mametesters.org/view.php?id=7721). I don't think Defender has dipswitches on the game board, hence no MAME dipswitch menu.
Some games used a different romset or a grounded pin to set cocktail mode too, Asteroids is one that used a grounded pin but luckily Asteroids plays fine upside down...
