These two splash images used to be in the config-updater folder I want to say, but I'd like to replace the scanning roms and now loading images with imagery custom to my Astro City. I have already found where to replace the splash.png, but where or how might I change these other two images?

They're in /boot/previews/system/ there are various versions for differing setups, you should only need to change the ones you use.
